François Rousset Martin spent his childhood between Burgundy, where he grew up, and the Jura, where his family owned a plot of vines, and he always had a thing for wine. But it wasn’t until later on, in 2007, that he decided to launch his own winery in the tiny village of Nevy-sur-Seille, not far from Château Chalon, the home of vin jaune.
Through his wines, François is driven by a desire to showcase all the subtle variations of these terrroirs. In order to achieve the goal, he prefers to top up the barrels, rather than following the local “rule” of letting the wines age in contact with oxygen. This translates into an incredibly wide range of cuvées, each unique and originating from a specific plot.

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
