On the occasion of London Craft Week, we've invited Alisdair Brooke-Taylor, chef and ceramic artist @natural.ceramics to talk about how his ideas take shape in the kitchen and in the studio.
Alisdair discussed his creative process and approach to sourcing, from the use of food byproducts such as oyster shells and animal bones, to the raw materials gathered around the restaurant and on his travels, like sandstone and volcanic basalt.
Objects and food elevate the art of dining while furthering the relationship to the environment and a philosophy of reuse, reduction and connection to the terroir that has a lot in common with natural and minimal intervention wines.

Starting from this summer our opening times are changing. From Tuesday 1st August onwards, our restaurant will be open for dinner from Tuesday to Saturday, and for lunch on Saturday as usual.
Our last day open before the holidays is Saturday 5th August. We will be back as usual from Tuesday 15th August.
